Easy Lemon Blueberry Trifle Recipe
This delightful trifle combines the bright flavors of lemon and blueberry for a refreshing and elegant dessert that’s perfect for any occasion.
Ingredients:
1 pound cake or angel food cake, cut into 1-inch cubes
4 cups fresh or frozen blueberries
2 cups lemon curd (homemade or store-bought)
2 packages (3.4 oz each) lemon pudding mix, prepared according to package instructions
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Lemon slices and mint leaves for garnish (optional)
Instructions:
Prepare the Lemon Layer:
In a mixing bowl, fold the lemon curd into the prepared lemon pudding until well combined. Set aside.
Whip the Cream:
In another bowl, beat the heavy cream with powdered sugar and vanilla until stiff peaks form. Set aside.
Layer the Cake:
Place a layer of cake cubes at the bottom of the trifle bowl.
Add the Lemon Layer:
Spread half of the lemon mixture over the cake.
Add the Blueberries:
Sprinkle 2 cups of blueberries evenly over the lemon layer.
Repeat Layers:
Add another layer of cake cubes, the remaining lemon mixture, and the rest of the blueberries.
Top with Whipped Cream:
Spread the whipped cream evenly over the top.
