Pumpkin Spice Crumb Cake

Ingredients:
For the Cake:
• 1 cup pumpkin puree
• ½ cup vegetable oil
• 1 cup granulated sugar
• ½ cup brown sugar
• 2 large eggs
• 2 teaspoons vanilla extract
• 2 teaspoons pumpkin pie spice
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• ¼ teaspoon salt
• 1 ¾ cup all-purpose flour
For the Crumb Topping:
• 1 cup brown sugar
• 1 ½ cups all-purpose flour
• 1 tablespoon pumpkin pie spice
• 1 cup unsalted butter, melted
Directions:
Preheat your oven to 350°F. Grease a 9×13-inch baking dish and set aside.
In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, granulated sugar, and brown sugar until well combined.
Add the eggs and vanilla extract, continuing to whisk until smooth.
Stir in the pumpkin pie spice, baking soda, baking powder, and salt.
Gradually add the flour to the wet mixture, stirring just until combined.
Pour the batter into the prepared baking dish, spreading it out evenly.
For the Crumb Topping:
In a medium bowl, combine the brown sugar, flour, and pumpkin pie spice.
Pour the melted butter over the mixture and mix with a fork until large crumbs form.
Evenly sprinkle the crumb topping over the cake batter.
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown and slightly crispy.
