Raspberry Cheesecake Bars
Ingredients:
2 cups crushed graham crackers
6 tablespoons unsalted butter, melted
1/4 cup sugar
2 cups fresh raspberries
24 oz cream cheese, softened
1 cup granulated sugar
2 teaspoons vanilla extract
4 large eggs
1/2 cup sour cream

Preheat oven to 325°F (163°C).
Combine crushed graham crackers, melted butter, and 1/4 cup sugar in a bowl. Press the mixture into the bottom of a 9×13 inch baking dish to form a crust. Bake for 10 minutes and then cool.
In a blender, puree raspberries until smooth. Strain to remove seeds, set aside.
In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, mixing after each addition. Fold in sour cream.
Pour half of the cream cheese mixture over the crust. Drop half of the raspberry puree by spoonfuls over the cream cheese layer. Use a toothpick or knife to swirl the raspberry into the cream cheese.
Repeat with the remaining cream cheese mixture and raspberry puree.
Bake for 35-40 minutes or until the center is just set. Allow to cool completely before cutting into bars.
