German Potato Pancakes
Ingredients:
– 1 pound potatoes, peeled and grated
– 1 small onion, finely chopped
– 1 egg
– 3 tablespoons flour
– Salt and pepper, to taste
– Vegetable oil, for frying
– Optional toppings: apple sauce, sour cream, smoked salmon, or sauerkraut
– Optional sides: green salad or sauerkraut
Directions:

1. Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
2. Finely chop the onion and add it to the grated potatoes. Mix well.
3. In a large bowl, whisk the egg until well blended. Add the flour, salt, and pepper to the egg and mix until smooth.
4. Gradually add the egg mixture to the potato and onion mixture, stirring until well combined.
5. Heat a large skillet over medium-high heat and pour enough vegetable oil to cover the bottom of the pan.
6. Take a heaping spoonful of the potato mixture and carefully drop it onto the hot skillet, flattening it with a spatula to form a pancake. Repeat with the remaining mixture, making sure not to overcrowd the pan.
7. Fry the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Transfer them to a paper towel-lined plate to drain any excess oil.
8. Serve the German Potato Pancakes hot, accompanied with your choice of toppings and sides. Enjoy the delicious combination of flavors and textures!
