Strawberry Rhubarb Pie
Ingredients:
1 1/2 cups granulated sugar
– 1/2 cup all-purpose flour
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 3 cups fresh strawberries, hulled and sliced
– 3 cups fresh rhubarb, chopped
– 2 tablespoons butter
– 1 double-crust pie pastry (homemade or store-bought)
Directions:
1. Preheat oven to 425°F (220°C). Place the bottom crust in a 9-inch pie pan.
2. In a large bowl, combine the sugar, flour, nutmeg, cinnamon, and salt.
3. Add the strawberries and rhubarb to the sugar mixture and toss to coat evenly.
4. Pour the fruit mixture into the prepared pie crust and dot with butter.
5. Cover with the top crust, crimping the edges to seal. Cut a few slits in the top crust to allow steam to escape.
6. Bake for 40-50 minutes, or until the crust is golden brown and the filling is bubbly.
7. Let the pie cool on a wire rack before serving.
