Garlic Parmesan Chicken and Potatoes
Ingredients:
2 chicken breasts
4–5 small/medium-sized potatoes
Olive oil
Salt, pepper, garlic powder, paprika (for potatoes)
2 tablespoons butter
1/2 teaspoon each of salt and pepper
1 teaspoon each of paprika, onion powder, and Italian seasoning
2 tablespoons minced garlic

1 cup shredded mozzarella cheese
Instructions:
Prepare the Potatoes:
Wash and peel the potatoes, then cut them into small cubes.
Toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika.
Cook the Potatoes:
Preheat the air fryer to 400°F.
Cook the potatoes in the air fryer for about 20 minutes, shaking them a couple of times during cooking to ensure even crisping.
Prepare the Chicken:
Cut the chicken breasts into small cubes.
Season the chicken cubes with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
Cook the Chicken:
In a skillet, melt the butter over medium-high heat.
Add the seasoned chicken cubes to the skillet and cook until the chicken reaches an internal temperature of 165°F.
Add Garlic and Sauce:
Once the chicken is cooked, add the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet.
Stir to coat the chicken evenly with the sauce.
Combine Chicken and Potatoes:
Once the potatoes are done, add them to the skillet with the chicken and sauce.
Toss everything together to coat the potatoes with the sauce as well.
Add Cheese and Melt:
Sprinkle the shredded mozzarella cheese on top of the chicken and potatoes.
Cover the skillet with a lid to melt the cheese, or place the skillet under a broiler in the oven until the cheese is melted and bubbly.
Serve:
Once the cheese is melted, serve the dish hot and enjoy!
